Muffin Monday 22: 4-cereal, maple syrup and walnuts

The back is placed under the reign of the energy with which we Tiuscha proposes to pile on the theme of a Muffin Monday 22 full of pep and as healthy as possible.

I'm not sure my own children enjoy, the more eager of sugar and chocolate in the morning, but if parents can still taste it ...

Muffins 4 cereals, maple syrup and walnuts
For 9 large muffins
100 g buckwheat flour
100 g wheat flour (preferably semi-complete)
70 g wheat bran
70 g of oatmeal or oat bran
1 tablespoon teaspoon of cinnamon powder
1 small teaspoon nutmeg
1 teaspoon salt
1 teaspoon fresh ginger
1 package yeast ½
1 teaspoon baking soda *

2 large eggs 100 g of maple syrup
100 g buttermilk or yogurt
60 g fat (butter, oil or cream)
1 teaspoon vanilla extract
100 g of nuts (pecans or walnuts)
decoration: oatmeal, walnuts broken

Preheat oven at 180 ° C. In a large bowl, mix all the flour, baking soda, baking powder, cinnamon, nutmeg and salt.
Add the ginger, Butter your muffin tins if not using parchment paper.
In two other bowls, separate the yolks from the whites. Add the yolks with the maple syrup, the vanilla, buttermilk, melted butter and mix well. Beat the egg whites until stiff.
Add the egg yolk mixture to flour and mix well. Add the walnuts and mix again. Then add the egg whites. If dough is too thick when you add the whites, try to relax by first adding a tablespoon of white. This operation is a little tricky because you must keep the volume of egg whites.
Fill your molds with 3 / 4. Sprinkle with oatmeal for decoration and broken nuts if you have any left. Bake 25 minutes. Perfect for breakfast in the morning tonic.

* Why put baking soda? Some tips:
- Add 1 tablespoon to c. in the cooking water pulses: this will shorten the cooking time because the sodium bicarbonate is a softening agent that reacts with the water hardness, calcium-particular.
- Add 1 tablespoon to c. in the cabbage cooking water: this will avoid unpleasant odors.
- Add a pinch in the water for cooking beans: they retain their green color and
- He favors lifting the pasta: It is in the baking powder mixed with an acidic agent. Sodium bicarbonate may be used as baking powder when heated or when in contact with a substance prone acid (milk, yogurt, lemon juice). In this case, it releases carbon dioxide (CO2) in the form of small gas bubbles that make the pasta softer. Sodium bicarbonate which is widely used in food in the United States, is often in recipes for cookies and muffins to make them softer.

So your turn to reflect and make your copies before October 3.

Talking music too. At concerts planned by the end of the year, I will find pleasure again in Lloyd Cole concert in Paris and too rare to miss it, I Foals continues to extol the wonderful new album, LCD Soundsystem (second concert in 6 months, I look after myself is not too serious) will happen with the Jamaica Festival Inrocks.

Open your ears to the sexy voice of Lloyd. That was in 1985.
