Back from China and a small risotto according






This is what holidays are finite-rich discoveries in landscapes. China is truly an amazing country. A few kilometers from a city modern, clean, cosmopolitan, suburban and rural areas where time has stopped, not necessarily as clean and prosperous that showcase what Shanghai put forward by a government Chinese eager to seduce. The parallels with New York is now: Shanghai is not China, like New York is not the United States.

calamansi I took back from China that look like tiny limes. They are of the same family as kumquats. Too good in lemonade ice. I think they are also called Chinese lemons.




Risotto candied ginger, lime (calamansi) and Parmesan Christophe Michalak
For two people
2 large handfuls of arborio rice
250 ml chicken stock

1 lime or 2 calamansi bio

2 shallots 1 clove garlic parmesan

50 g 40 g 25 g ginger
olive oil

Boil your chicken broth with garlic. Remove garlic after 10 min of infusion.
Mince the shallots and fry in oil Olive. Add rice and stir until the rice becomes translucent and pearly. Add to oven and when the chicken stock until cooked rice which takes between 17 and 20 minutes. Add cubes of candied ginger, lime zest and big shavings of parmesan. let your risotto covered for 4 minutes before serving.

Delicious when a cube of candied ginger in your mouth and explodes with fresh acidity calamansi.
